37g | extra virgin coconut oil, melted |
37g | organic maple syrup |
1 teaspoon | vanilla |
20g | 70% dark organic chocolate, chopped |
This is my latest go-to recipe for the unexpected visitor on the weekend. The original recipe makes scones, but I've turned them into cookies by leaving out some ingredients and making them smaller. It's quick to mix the ingredients together, you don't need a food processor or mixer and the cookies cool quickly, so you can munch away after about 20-30 mins of cooling. The subtle hit of espresso is what afternoon tea calls for!
- Preheat oven to 160ºC and line a baking tray with parchment paper.
- Mix all dry ingredients in a bowl.
- Melt the coconut oil in a small pot on low heat. Once melted, pour into the flour mixture. Add the maple syrup and mix well with your hands.
- Fold in the chopped chocolate and shape into a dough.
- Use your hands to shape small sized balls of dough and place onto the baking tray.
- No need to press the dough down as the mixture is too dry and crumbles easily. Brush the top with leftover melted coconut oil from your pot.
- Bake at 160ºC for about 16 mins, flipping each cookie around at halfway mark (after 8 mins) and continue to bake.
- Remove from oven and leave to cool. Enjoy.
